Creamy tortellini soup with spicy sausage

This may sound cheesy but when you try this creamy soup, you’ll fall in love at first bite! We have been making different soups and this one is by far one of the most delicious we’ve made! The ingredients are so simple that can be found at your grocery store all year round!

Ingredients:

1 pound spicy Italian sausage
1 tsp black pepper
1/2 tsp garlic salt
1 white onion, peeled and diced
2 large carrots, peeled and diced
1 tablespoon of Italian seasoning
2 garlic cloves, minced
48 oz (1 1/2 containers or 6 cups) chicken broth
1/4 cup all-purpose flour
6 oz (1 small can) tomato paste
1 cup heavy cream
10 oz/1 package of refrigerated cheese tortellini
2 cups spinach

Directions:

  1. Start by cooking the spicy Italian sausage in a stew pot or a Dutch oven. Once the meat is fully cooked/browned set it aside on a plate.

  2. Using the same pot we used to cook the sausage, we will add carrots, onions, minced garlic, and Italian seasoning. Keep stirring until the onion is soft.

  3. Pour in the chicken broth and all-purpose flour, and stir well.

  4. Add the tomato paste and heavy cream, and let this simmer for 5 minutes.

  5. Add your cooked sausage to the pot and let it cook for 7 to 10 minutes.

  6. Turn off the heat on your stove and add your spinach. Mix and cover the pot with a lid. Let it rest for 10 minutes so the spinach wilts.

  7. Once the spinach wilts, your soup is ready!
