Corn Tortillas
INGREDIENTS
1 cup - Corn tortilla mix. I use a brand called Maseca.
1 cup of cold water. Make sure it’s cold water.
INSTRUCTIONS
Mix the corn flour mix and water in a bowl. If the dough feels dry as a bit of extra water.
Roll the dough into tiny two-inch circles.
This step will only have to be done once in a lifetime: get a bag and cut two circles about 8 inches wide. You’ll be using these sleeves to keep the dough from getting stuck on the press. So if we’re looking at it from a layers perspective it’s the tortilla press then the plastic sleeve, followed by the dough, then the top sleeve and then press.
Place your dough balls on the tortilla press (you can get one from Amazon). Press the dough until it’s a tortilla. Once the tortilla dough is ready remove the sleeves.
Place a square griddle on the stove top at medium-high heat.
Place the flat tortilla dough on a hot griddle. Temperature should be at medium high. Flip the tortilla at least 4 times. Make sure it doesn’t burn.
