CHILE COLORADO
This is what spicy dreams are made of! This is a traditional Mexican dish that is very flavorful and spicy!

Chile Colorado
INGREDIENTS
1 pound steak
Guajillo pepper (these are dried and sold in bags. Use the whole bag)
Chile del árbol (another type of pepper, also dried and sold in bags. This one is extra spicy so use a small fistful)
1 garlic clove
2 tablespoons of salt (add to taste)
NOTE: To tone down the heat, mix these two ingredients. I will call for this in the recipe.
1/2 cup of Maseca (Maseca is corn tortilla mix)
1/4 cup of water (this will tone down the spiciness; Maseca is a corn tortilla mix)
INSTRUCTIONS
Prepare the dried peppers by cleaning and removing the seeds. Once they’re clean, place the peppers in a bowl with cold water. Let them sit there for an hour. We’ll use this water later, so don’t dump it - I’ll refer to it later as spicy water!
While the peppers are soaking let’s cut the steak into cubes.
Dice half an onion and minced garlic - once it’s prepared set side.
Let's cook the meat with an onion and garlic. Let it cook until the meat soaks up all the liquid.
While the meat cooks - put your peppers and 1 cup of the spicy water in a blender with a garlic clove and salt. Blend for about 5 mins.
Once it’s blended, strain and make sure to remove all the seeds. We do not want any seeds in your Chile.
Once the meat has soaked up all the liquid add your chile.
If it’s too spicy add the maseca and water mixture now.
Stir for 10 minutes and serve!
